Avocado-Cayenne Toast

This is literally one of the best and most delicious breakfasts ever. You may have had, or heard of avocado toast before. If not, this sort-of recipe could change your life.

This is delicious by itself atop toast, or with a variety of toppings. Some of my favorites are:

  • pea shoots (pictured here)
  • scrambled tofu
  • fried, poached, or scrambled egg
  • pickled onions
  • red pepper flakes

Makes enough for 2-3 toasts

1 avocado

1 lime (zest and juice)

freshly ground salt & black pepper

cayenne

toast (I use Udi’s gluten free bread)

Cut open and pit avocado. Remove the fruit and put in small bowl (I use this avocado tool). Mash well with a fork, until desired texture is reached.

Zest lime over bowl of mashed avocado. Squeeze lime juice into bowl. Mix well with fork.

Grind salt and pepper to taste into avocado mixture. Mix well with fork.

Add a few shakes of cayenne to mashed avocado (to taste). I like things spicy, and usually do 2-4. Mix well with fork.

Spread on toast, and add toppings if desired. Enjoy!
