Now I know what you’re going to say, “Summer Toast? But Natalie, it’s February. It’s cold, grey, and there is currently a polar vortex thing happening across the north and mid eastern-ish regions of the United States!”. All of these points are valid and true. But here in San Diego County, there is most certainly not a polar vortex. In fact, it has been an unusually warm and dry winter, resulting in the local strawberry fields wrongly thinking it is summertime. I’m not complaining when it means I get sweet, juicy, perfectly ripe strawberries in the middle of this so-called “winter”… But could someone please send a few semi-impressive rainstorms my way? I’ll be waiting expectantly. Sitting on my balcony without a jacket, enjoying my Summer Toast in the San Diego sunshine.

Note: If you're in a hurry and need to eat on the go, this can be topped with another slice of bread. It's still just as delicious, I promise.

Makes 1 slice

1 slice of your favorite bread (I use either Ezekiel Sprouted Whole Grain Loaf, or Udi’s Gluten Free Multigrain)

Handful of fresh Strawberries

Almond Butter

Raw Honey (optional, vegans can omit)

Toast the slice of bread. Spread with almond butter, and honey. Finish by slicing and layering strawberries on top of everything. Enjoy!
